Super Simple Tomato and Spinach Pasta

Tomato and Spinach Pasta:
Ok so this recipe is neither orignal nor showstopping but the beauty about it is that it’s super flexible and easy. There are options to add meat, add different veggies, take out any veggies,
and just be creative!

Hello! 006

You’ll need:
Cherry Tomatoes
Spinach (Fresh or frozen your preference)
Pasta (I used Penne Rigate, I’m sure other kinds will work too)
Extra Virgin Olive Oil
Rosemary Spice-not pictured (fresh or dried-I used plain dried spice)
Parmesan Cheese
*And anything else you want!

First Cook your pasta according to package instructions
Then cook your tomatoes and spinach in some olive oil in a frying pan. You can cook them until they are burnt or where they still retain a fresh crisp flavor, your choice. And you don’t have to cook them together if you don’t want to.
Add Rosemary herbs to the tomatoes or spinach.
Once done cooking add the tomatoes and spinach to your pasta
Sprinkle some Parmesan on top and Voila! You’re a chef.
Hello! 011.JPG

I made enough for 5 people and I froze the other 4 for pre made dinners this week.
The total cost for 5 people=$ 5.30 or $1.06 per person/meal
(And I still have supplies left over)

If you’re going to try this recipe,
I hope you enjoy the results as much as I did. And as always thanks for reading! Kris

Wintery Day in West Texas

The majority of this post will be pictures. We don’t often get snow in West Texas. We get ice. But I believe we recevied 3 inches (?) of snow this year! These pictures follow along our river where I was able to find an untouched acre of snow!Winter Day in San Angelo 020Winter Day in San Angelo 004 - Copy
